I cooked again! I decided to keep it simple and make chicken and vegetables. Easy, right? Well, I ended up overcooking the chicken and it was reeeallllly dry. We ate it that night, but my husband covered his in BBQ sauce, and since I can’t eat BBQ, I just went with it.
We were going to have a lot of leftover chicken because I baked the whole bag. I knew, however, the chicken was just going to sit in the refrigerator and was never going to get consumed as leftovers. I was either going to have to throw it out, or fix it. Enter, chicken salad! It was the perfect answer, and we’ve already eaten all of it, over salad, on sandwiches, and with crackers.
Ingredients:
- 3 fully cooked boneless/skinless chicken breasts
- 2/3 cup mayo
- 1/3 of a red onion
- 3 hard boiled eggs/peeled and chopped
- 1/3 c dill relish
- 1 tablespoon lemon juice
- salt and pepper to taste
Directions:
- Shred the chicken. I just used to forks to pull it away. Even though the chicken was dry, it wasn’t too difficult.
- Mix all ingredients together in a large bowl
- Chill and serve!
I’ll be totally honest with you, I’ve never made chicken salad. It was really easy, and I was so glad that I was able to use a main dish that I’d practically ruined.
Maybe I’m kind of getting the hang of this whole kitchen/cooking thing.
